a dream.

We set roots in Greenville to create food that builds communities- and we think we have done that. But, one of the drawbacks of a small town is that we don’t have a lot of variety…. and now that winter is coming we are craving ramen. And we are sure that we are not the only ones- so, for a limited time only (pretty much while it is soup weather outside), we are serving a RAMEN POP-UP Mondays and Tuesdays out of Luke’s. Limited menu and limited quantities- we will be around from 5pm until we sell out each day.

We named Luke’s after Chef’s middle son. Well, this one is named after our oldest- Sam. He loves his ramen. A few years ago ramen is all he would eat for lunch and dinner. Bō translates to MY SON from Japanese, so we felt like this was a great way to pay homage to him.

  • A pop-up is a temporary dining experience. Instead of a permanent restaurant, we “pop up” inside Luke’s during select nights. It lets us serve creative ramen in a focused, fun way. “Popping-up” allows us to focus on crave-able ramen for just a few months without having to worry about finding a permanent location, or overhead costs, etc.

  • Bo Ramen is a limited-time pop-up by the team at Luke’s in Greenville. We specialize in scratch-made ramen with house broths, handmade toppings, and bold flavors you won’t find anywhere else nearby.

    You will also find small bites and bao buns similar to what you would find in a Japanese Izakaya (a small bar)…

  • We will be popping up inside Luke’s in downtown Greenville. The address is 2406 Lee Street, Greenville TX 75401.If you google us and it says Luke’s… you’re not crazy.



  • We will be open only Monday’s and Tuesday’s. We will open at 5pm and keep going until we sell out! We will have limited stock daily, so make sure and come early!

  • Currently, Bo Ramen is first-come, first-served. You can email us and order ahead if you want, or you can order through doordash- but no reservations.

  • We’ll always feature our signature bowls, but we will also rotate specials, desserts, and seasonal ramen to keep things exciting.

  • Yes! We will definitely take orders ahead of time by using our website to send in orders. And, we will also be using doordash if you want delivery!

  • As a pop-up, we’re temporary — but the more people slurp, the longer we’ll stick around 😉.

    Realistically we will be around the “cold season”, so late October until mid February?

    We may also decide to keep the pop-up going and phase out the ramen but add in other exciting items like yakitori and sushi once the weather warms up.
